Cookies and localStorage are different
A cookie is a small value a browser may send with requests to the relevant website. LocalStorage is a browser storage area that site scripts can read; its contents are not automatically attached to every network request.
The site’s JavaScript does not set HTTP cookies. It can save a preference in localStorage when you select one of the controls on this page. Both forms of storage can fall under privacy and electronic-communications rules, so the distinction is technical rather than a claim that localStorage is exempt from those rules.
No optional tracking scripts are included in these pages. Selecting Accept does not load analytics, advertising or other optional services.

Storage settings, private browsing or device cleanup can remove or block this value. A preference is specific to the browser and origin; it does not automatically follow you to another device.
Your local preference
Both choices leave the current site free of optional trackers. Essential Only records that you do not want optional storage. Accept records acceptance, but is not blanket permission for undisclosed future services.
JavaScript is needed to read or change the saved preference using these controls.
Other activity and your controls
The mobile menu and reading animations do not save persistent preferences. The contact tool keeps its preview in the current page, not in localStorage. A copied message or downloaded file is separate from browser cookie storage.
Hosting infrastructure can have its own security or delivery behavior, which is not controlled by these static scripts. If additional services are introduced, their storage and any required consent should be disclosed before activation.
